Since apricots are in season I thought it would be fun to have them be the main ingredient for cocktails. And here is a fun fact that you probably didn’t know about Amaretto. The almond like flavor comes from the pits of apricots. I figured that since Amaretto and apricots are practically the same thing, they would pair well together. I wasn’t wrong. This Apricot Amaretto Cocktail is a perfect combination of flavors. The rest of my inspiration came from my little herb garden**. I have an abundance of fresh oregano and decided to throw a few sprigs into the mix. It added just the right balance of having your guests try to figure out what that little extra flavor is. These cocktails are light and refreshing and easy to prepare in advance.
** I use the term garden loosely. Its actually just a very large planter where I keep about 7 types of fresh herbs that are constantly getting overgrown by the mint.

Ingredients
Method
- Chop the apricots
- Place in a bowl with the rest of the ingredients
- Crush the oregano against the side of the bowl with a wooden spoon to release some of the oils
- Let sit for about 2 hour
- Pour everything into a fine mesh strainer set over a bowl and macerate until you extract as much juice as possible
- Divide into two glasses
- Add ice cubes and garnish with slices of fresh apricot and oregano sprigs

Sounds interesting. I like to macerate with superfine sugar; I find it makes a smoother syrup. However, I have only ever macerated strawberries. Apricots might work differently.
I let it sit for a while so the sugar dissolves. This way I don’t have to make simple syrup.
