I’ve made these Chocolate Coconut Granola Bars so many times with so many variations. A few weeks ago I was out of one of my key ingredients so I left it out and substituted with some other items from my pantry. My in house food critic pronounced them “your best granola bars yet”. I usually just eyeball and dump ingredients into a bowl but this time I chose to measure them so that I can share this recipe with you. I had a lot going on today and I wasn’t able to photograph the bars right away so I left explicit instructions not to eat the bars. As I was leaving the house I reiterated my request to wait until I photographed the granola bars. It was too late, there was already a corner missing from the pan. I took that as the ultimate compliment.
What I love about this recipe is that I literally dump everything into a bowl and mix it with my (gloved) hands. You bake it for only 20 minutes. Once its cooled, I just break it into pieces. I like it keep it in the freezer and you don’t even need to defrost it. These bars are perfect for breakfast on the go. They contain flax and chia seeds which helps keep you full and contains plenty of omega-3 fats.

Ingredients
Method
- In a food processor fitted with the S blade, process oats until they reach consistency of picture above. About 10 seconds
- Chop chocolate
- Add oats, chocolate and the rest of the ingredients to a mixing bowl
- Mix well until combined
- Spread into a 9x13 pan lined with parchment paper
- Bake at 350 for 20 minutes
- Let cool and break into pieces
- Serve
