I call this Easy Chicken Tortilla Soup but it’s even easier than easy. The most time consuming part of this recipe is sauteing the onions. My sisters in law Chana and Nava both asked me for a quick easy one pot dinner recipe that tastes really good. This fits both criteria and it’s delicious and tastes gourmet. I sauteed onions and garlic in a dutch oven and then added the rest of the ingredients. I then put it in the oven for about 5 hours at 225 degrees. I added some cilantro at the end but you can add it at the beginning as well. When you are ready to eat you shred the chicken which easily falls apart and serve it with any combination of the following garnishes; diced avocado, fried tortilla strips and sliced jalapeno. This is a one pot dinner that I can promise you’ll be making again.

Method
- Saute onions in a dutch oven until translucent
- Add minced garlic and sauté another 30 seconds until fragrant
- Add the rest of the ingredients to the pot
- Put covered pot in the oven at 225 for 5 hours
- Remove pot from oven, stir pot and shred chicken using tongs
- Serve with diced avocado, fried tortilla strips and sliced jalapeño peppers
