I’ve been experimenting with my Instant Pot and came up with this Instant Pot Beef Sweet Potato Curry. I didn’t expect it to come out nearly as good as it it. The sweet potatoes are cooked together with the meat and the potatoes practically disintegrate to create a rich deep orange colored broth. I added cauliflower to make it a bit more filling and a lot of fresh spinach. The spinach is cooked briefly just to let it wilt. This curry is a well rounded meal. I eat it plain but this would be wonderful served over rice.
- 1 lb cubed beef
- 2 tablespoons oil
- 1 onion chopped
- 2 cloves garlic minced
- 3 medium sweet potatoes cut into large chunks
- 1 can coconut milk
- 1 cup beef broth
- 2 tablespoons curry powder
- 2 teaspoons salt
- 2 10 oz. bags of fresh spinach
- 1 16 oz. bag of frozen cauliflower
- Set Instant Pot to Saute
- Brown beef in olive oil and remove from pot
- Saute onion until translucent add garlic
- Add curry powder
- Abeef broth and mix well
- Add beef and sweet potato
- Cook on pressure for 20 minutes
- Release pressure manually and open pot
- Add coconut milk and mix well ( the sweet potato will fall apart)
- Add cauliflower and set pot to Saute
- Let heat through - about 5 -10 min
- Add spinach and let wilk and turn off pot
