These Low Carb Tuna Quesadillas are my lazy go to dinner. They are really that easy. It happened one day that I was out of ideas dinner ideas and I forgot to defrost something from the freezer. I was feeling really lazy and didn’t want to go to the market. Takeout always dissapoints me so that’s how this recipe was born. We always include protein in our dinner and this was the perfect idea. It’s tasty, cheesy and will completely satisfy you. You can prepare the tuna in advance ( like I did) and then prepare the quesadillas when you are ready to eat. I am confident that you will like them as much as I do.
- 2 cans of tuna drained
- 3 stalks of celery chopped fine
- 2 - 3 heaping tablespoons of mayonnaise
- 3 low carb flour tortillas
- 2 cups of shredded cheese
- 3 tsp butter
- In a medium size frying pan add one teaspoon of butter.
- Add wrap to the pan when the butter is melted and sprinkle wrap with cheese so that it's completely covered.
- When the cheese begins to melt, add tuna to half of the wrap and fold over
- Heat until cheese is completely melted and tuna is warmed through
- Cut into quarters and serve
