This Miso Maple Acorn Squash Recipe is so full of delicious flavor. It’s sweet and salty and tangy and quite addictive. If you don’t already have miso in your fridge, it should become a kitchen staple. You can add it to beef, chicken or roasted vegetables. I add some maple syrup to the miso and got a perfect combination of flavors. The maple syrup adds sweetness and also helps caramelize the squash. I cut the squash in rings for a beautiful presentation.

Ingredients
- 2 medium acorn squash
- ¼ cup olive oil
- 3 tablespoons miso
- 2 tablespoons maple syrup
- 3 tablespoons boiling water
Instructions
- Slice acorn squash into1/2 inch rings and discard seeds
- Mix miso with hot water in a a bowl until lumps are removed
- Add maple syrup and olive oil and mix well
- Place acorn squash on baking sheet and toss with miso mixture
- Bake at 425 for 25-30 minutes until squash is soft and caramelized
