I think that lemon and blueberry are the perfect combination. These One Bowl Lemon Blueberry Muffins are no exception. There is so much lemon flavor in these muffins. I used candied lemon peel, lemon extract and lemon juice. I made these into mini muffins for the perfect snack but feel free to make these regular sized. This recipe is made all in one bowl by hand so there is so little clean up. In my book, that’s the perfect recipe.
One Bowl Lemon Blueberry Muffins

Ingredients
- 2 cups flour
- 1 cup sugar
- 2 teaspoons baking powder
- ½ teaspoon salt
- ½ cup non dairy or regular milk
- ½ cup oil
- 2 eggs
- 1½ teaspoons vanilla
- 2 teaspoons lemon extract
- 2 oz. candied lemon peel
- Juice of two lemons
- 1 cup dried blueberries
Instructions
- Preheat oven to 350 F.
- Grease and flour a mini muffin tin.
- Whisk together the dry ingredients in one bowl and then make a well in the center.
- Add the wet ingredients to the well and mix
- Gently mix the dry into the wet, just until combined.
- Divide into the muffin cups.
- You will have leftover batter. Wait until the muffins are cool enough to remove, wipe out the tin, re-grease and refill.
