I named this recipe Peach Pie Crumble Squares because really its a cross between the two. I had some frozen peaches in my freezer for forever because my last recipe did not come out very well. My niece Shira is throwing a party this weekend in honor of her baby and I wanted to make something. This is what I came up with. The fruit is cooked until it resembles peach pie filling and it’s combined with a nutty shortbread crust and lots of chunky crumbs. It’s the perfect balance of salty and sweet and tastes like summer.
Peach Crumble Squares
Ingredients
- 4 cups frozen peaches
- 1 tablespoon sugar
- pinch of salt
- 1 tablespoon corn starch
- 2½ cups flour divided
- 1 cup ground almonds
- 1 cup light brown sugar
- ½ teaspoon salt
- 1 tablespoon vanilla
- 1 stick butter or margarine
- ½ cup oil
Instructions
- To Make The Filling:
- Add peaches and 1 tablespoon of white sugar to heavy bottom small pot
- Cook until juices are release and fruit is softened
- Add 1 tablespoon of water to corn starch to make slurry
- Add to pot and cook until peaches are thickened.
- Set aside and let cool
- To Make The Crust:
- Add butter, oil, light brown sugar, vanilla and salt to a bowl
- Mix until thoroughly combined. You can use a hand mixer
- Add 2 cups flour and ground almonds
- Mix until combined
- Press ⅔ of dough into a 9x13 pan
- Bake at 350 for 15 minutes until golden
- Remove from oven and let cool
- Add ½ cup flour to remaining dough mixture and mix until crumbly
- Once the crust is cooled, spread peach mixture and cover with crumbs
- Bake at 350 for 25 minutes
- Let cool completely before slicing into squares
