If you have looking for a recipe for perfect roasted potatoes, look no further. This recipe ensures that the potatoes are crispy on the outside and soft and creamy inside. Best of all, there is very little oil involved and minimal ingredients. No peeling is involved so there is very little hands on time. I cook the potatoes up to a few days ahead of time so when I want these, they are ready in 25 minutes. I sprinkle ranch seasoning on the sliced potatoes with a little salt on both sides, then spray with oil. Flipping the potatoes halfway during baking ensures a perfect crunch. These potatoes are literally full proof and so tasty!
- 6 idaho potatoes
- Green goddess seasoning
- Salt
- Oil spray
- Wash potatoes well without peeing
- Boil whole potatoes until you can easily pierce with a fork
- Let potatoes cool completely. You can refrigerate up to 3 days
- Slice potatoes about 1½ inches thick
- Lay on a parchment lined baking sheet ( or two)
- Spray potatoes and sprinkle with seasoning and salt
- Flip potatoes and repeat on the other side
- Bake at 425 on the lowest rack.
- After 15 minutes flip the potatoes using a tong and bake another 10 minutes
