Yesterday was a long Sunday and I had no plans so I decided to make these Quiche Bread Cups. Some of my recipes are really just inspired by ingredients that I have at home. This is one of them. I bought some low carb/high fiber sandwich bread a little while ago and it was just taking up room in my tiny freezer. This was the perfect excuse to use the bread. The cups take almost no time to make. You can use any soft sandwich bread. You roll it out with a rolling pin so that its thin and then stuff it into a greased muffin tin. That’s it. The most time consuming part is making the filling. I used peppers and scallions and sauteed it a bit. The short baking time doesn’t really let the vegetables cook through so I give it a head start. I added some cheese, the vegetables, the custard and some more cheese. Don’t worry if the bread absorbs the custard. It will puff up once it bakes. These quiche cups are delicious.
- 3 colored peppers chopped in ¼ inch cubes
- 3 mildly spicy peppers chopped fine
- 6 oz of scallions sliced thin
- 3 tablespoons of olive oil
- 12 slices of bread
- 2 cups of grated mozarella
- 1 cup of milk
- ⅛ cup heavy cream
- 2 tablespoons flour
- 1 teaspoon salt
- 3 eggs
- Add scallions to a frying pan ( reserve a few slices of the green part for garnish)
- Saute 3 minutes and add peppers
- Saute for 10 minute and set aside
- Following pictures above, roll out bread and add to a greased muffin tin
- To make the custard, addeggs, milk, cream, salt and flour to a blender.
- Blend until smooth
- Add a tablespoon of cheese, then a tablespoon of vegetables, 3 tablespoons of the custard and a little more cheese to the bread cups
- Bake at 350 for 25-30 minutes
- Garnish with scallions
