This Roasted Potato Salad takes the best of roasted potatoes and potato salad and combines it into one addictive potato dish. If you like them both I suggest you make a double batch. Honestly, when I made this I had no idea if it was going to work. I was hosting Greg’s friend for dinner and I didn’t want to serve the same roasted potatoes that I always do. I’m not one who is afraid of trying out new dishes on guests since the worst thing that can happen is that I’ll lose my credibility :-). Also, he is more of a brother than a friend so I knew he’d forgive me. It was a huge success. Besides looking pretty its very flavorful. The creaminess of the dressing gets cooked off and give the potatoes a nice crisp. The mustard gives it some extra umami. If you are short on time, you can cook the potatoes ahead and then dress and roast the potatoes before serving. These are excellent at room temperature so it’s perfect to take along on a picnic. I just gave this recipe to my friend Adina and she already made it twice in one week. You shouldn’t need any more endorsement than that!
- 1 lb small potatoes
- 1 teaspoon salt
- ¼ cup mayonaise
- 3 tablespoons olive oil
- 1 heaping tablespoon good quality mustard
- Salt and blackpepper to taste
- ¼ cup chopped chives
- Boil potatoes with skin on for about 15 minutes until you can pierce it with a fork
- While potatoes are cooking combine mayonaise, mustard, olive oil, salt and pepper
- Drain potatoes and lightly smash with a fork until they are split
- Toss potatoes with dressing and roast at 400 for ½ an hour until the potatoes are crispy
- Sprinkle with chives
