This Split Pea Soup recipe is a soup my mom has made for years. To me this is the ultimate comfort food . It somehow fell out of rotation and I’m not sure why but now that I made it again, I will be making another batch soon. This recipe is quite simple and doesn’t call for much spice but I assure that that it is full of flavor. The soup is equally good with yellow or green peas. I promised my friend Sari I would give her the recipe. So here it Sari.
Split Pea Soup

Serves: 8
Ingredients
- 1 large onion - yellow or white
- 3 cloves garlic minced or garlic cubes
- 3 tablespoons olive oil
- 3 bay leaves
- Salt to taste
- 1 large carrot grated or diced really small ( see picture)
- 1½ cups dried split peas
- 10 small gray squash or zucchini
Instructions
- Dice onion small
- Saute on medium heat until translucent
- Add garlic and sauté until fragrant
- Add bay leaves and about 8-10 cups of water
- Add peas and carrots and cook on low for about two hours, until peas disintegrate
- Add squash and cook another 30 minutes
- Add salt to taste
