These Vegan Pumpkin Cranberry Muffins are the perfect way to start your Thanksgiving Day or for breakfast any day of the year. I wanted to create a muffin that wasn’t too sweet but still has the flavors you want when you think of pumpkin and cranberry. I used fresh cranberries that I sweetened with just a bit of maple syrup. The muffins only have a half a cup of sugar. There should really be very little guilt involved in eating these. You can make these ahead of time and freeze them.
Vegan Pumpkin Cranberry Muffins

Ingredients
- 2 cups fresh cranberries
- ¼ cup maple syrup
- ½ cup water
- 2 cups flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- ½ cup sugar
- 1 cup almond milk, room temperature
- 2 egg replacements
- 1 cup canned pumpkin
- ½ stick vegan butter, melted ( I use earth balance)
- 1 teaspoon vanilla
- 1 tablespoon pumpkin spice
Instructions
- Process cranberries in a food processor using the S blade until chopped into small pieces
- Add to a pot with water and maple syrup and cook on medium to low heat until cooked and thickened
- Spread on a plate to cool quickly
- Prepare egg replacement and set aside
- Add all dry ingredients to a bowl and whisk
- Add all the wet ingredients and mix well
- Mix wet and dry ingredients until combined
- Preheat oven to 350 degrees
- Grease 12 cup muffin tin
- Fill halfway, add 1 tablespoon of cranberry and then cover with more batter
- Bake for 25 minutes until a toothpick inserted comes out with a few crumbs attached














Batsheva brought these over ( with a fully loaded lunch, might I add!) when I was under the weather. They are perfect. The perfect balance between sweet and tart. The perfect doughy texture and good chewing satisfaction. The perfect way to make me feel good without making me feel too guilty for eating a dessert.
