If you love wine and you love chocolate, you will definitely be a huge fan of these vegan red wine chocolate truffles. I’ve been wanting to come up with my own truffle recipe and thought of making these since red wine and chocolate are a perfect duo. I reduced the red wine since I really wanted the wine flavor to stand out and used coconut milk to keep the ganache vegan. I then dipped the ganache into melted chocolate. I sprinkled the tops with cacao nibs for a little added textured. These are delicious and so professional looking. In fact Greg thought they were store bought.
If you have left over reduced wine, I suggest using it for this london broil recipe.
- 18 oz dark chocolate divided (I like to use 72%)
- 1 13.5 oz coconut milk - just the cream part. Reserve the rest for another use
- 1½ cups red wine
- Cacao nibs
- Reduce wine in a pot on the stove to about ¼ cup
- Melt 12 oz chocolate in the microwave on 50% power for about 3 minutes
- Mix wine chocolate and cream together and refrigerate for about 4 hours until the ganache hardens
- Melt 6 oz of chocolate on 50% power for 2-3 minutes and mix until smooth
- Scoop out balls of ganache using a small scooper
- Dip in chocolate and sprinkle with cacao nibs
- Serve
