I was at my parents for one of the holidays when my mom whipped up this soup, inspired by something similar she had eaten at a Manhattan cafe. My mom and I often argue about recipes. She is a minimalistic cook, and I like to create unique combinations and use many different spices. In this case, I have to agree with her. Less is definitely more, and the soup tastes rich and buttery while the spinach rounds it out with a little texture. Plan for everyone to have seconds.

Ingredients
Method
- Saute onions onions until translucent on a medium flame
- Add minced garlic and saute until fragrant, about 30 seconds
- Add sliced zucchini and water just to cover the zucchini
- Add salt
- Cook for 1/2 hour on medium to low flame until vegetables are soft
- Remove from flame
- Puree until smooth using an immersion blender
- Add spinach and return to flame just until spinach is wilted
