Remember that Farmers Market trip I told you about a little while back? Anyway, I always end up buying way more produce than I have time to cook. I had a bought this beautiful bunch of beets because they looked so pretty but I never got around to using them and they ended up somewhere in the back of the fridge for a long time. Lucky for me, beets last a very long time and I finally decided to do something with them. I was pressed for time and wanted it to look really pretty. I also had a package of goat cheese sitting in my fridge that I wanted to use up so I brain stormed with my sister Naomi and we came up with this. When I say this is simple, I really mean it. You bake the beets in the oven, rub off the skin and slice them. You cut the goat cheese into rounds, stack them, drizzle with olive oil and balsamic vinegar and some chives. That’s it. I promise you that your guests will be impressed and you don’t have to be like me and tell them how easy it was.
- 6 small beets
- 1 log of goat cheese
- olive oil for drizzling
- balsamic oil for drizzling
- Chives chopped
- Wash beets and wrap each one in foil
- Bake at 375 for about an hour, until soft
- Let beets cool and rub off skin
- Slice beets and goat cheese into rounds
- Stack beets and goat cheese, alternating starting with beets. (See pic)
- Drizzle with olive oil and balsamic vinegar and sprinkle with chives
