I was able to leave work early one day that the Farmer’s market was open so I hopped on the subway to hang out at my favorite place. It was extra fun because I met my niece Leora there and got to play guide and show her all the interesting vegetables that were being sold. I saw these baby Japanese turnips that I was planning to buy to roast. I still had a long journey home and I didn’t want to shlep a huge bag with me so I was going to ask the vendor to discard the leaves. I changed my mind at the last minute and was so glad because I was able to make these Turnip Top Fritters. They were a huge hit and although they are fried, they are packed with nutrients so they are still healthy.
- Two bunches of turnip greens, washed and chopped
- 2 medium sized potatoes
- ½ medium sized yellow onion
- 2 eggs
- 1½ teaspoons salt
- ⅓ cup plus 1 tablespoon vegetable oil divided
- In a large frying pan sauté greens with 1 tablespoon olive oil until wilted and some moisture has evaporated. Transfer to a large bowl
- Wipe frying pan clean and add ⅓ cup oil
- Peel and grate potatoes using large holes on a box grater and add to a kitchen towel. Squeeze dry and add to the bowl
- Grate or puree onion and add to the bowl
- Add eggs and salt and mix well
- Shape into patties.
- On medium flame, fry patties until golden brown on each side
- Serve with a dipping sauce of ½ cup mayonnaise, 1 clove of garlic minced and 2 tablespoons of lemon juice
