This Easy Gluten Free Eggplant Parmesan recipe happened by mistake. I was hoarding riced cauliflower from Trader Joe’s because they were getting sold out early in the morning. I had 3 bags of it that were about to go bad and I also had a partially cut eggplant that I’m embarrassed to stay I tried to spiralize. I decided to bake it with sauce and cheese but was afraid it would be too watery, so I chopped up the eggplant and microwaved both vegetables separately. I then used a towel to squeeze them out. I mixed all the ingredients together and it came out way better than I imagined. My live-in food critic did not approve but that is only because he doesn’t like eggplants. My friend Adina was my next taste taster and she gave it a resounding “Soooo good!” I could not agree more. Best of all, it only takes about 15 minutes to put together if you are not photographing each step.
- 16 oz riced cauliflower
- 1 medium/large eggplant
- 6 oz tomato sauce like hunts brand
- 1 clove garlic minced
- 2 tablespoons finely chopped basil
- 2 tablespoons olive oil
- ¼ tsp freshly ground black pepper
- 4 oz freshly grated cheddar cheese
- ¾ cup grated Parmesan Cheese
- Sprinkle cauliflower with salt in a bowl and microwave on high for 4 minutes
- Squeeze moisture out using a towel and set aside
- Chop eggplant and toss with salt and microwave on high for 4 minutes
- Squeeze moisture out and add to bowl with caulifower
- Combine tomato sauce, garlic, basil, olive and black pepper
- Add sauce to bowl with vegetables. Toss to combine.
- Add parmesan cheese to bowl. Toss to combine
- Divide into two shallow ceramic pans.
- Cover with grated cheddar
- Bake at 350 for 25-30 minutes until cheese is melted and bubbling
