Whenever I shop at Costco I always buy huge bags of vegetables imagining that it will be dinner for the week. What really ends up happening is that I get too busy and then a few days later, I worry about it going bad. I recently did that with a huge bag of snap peas. Thankfully, I came up with this Asparagus Snap Pea Salad and I was able to use up most of it. This salad is fresh tasting and retains the crunchiness of the vegetables because they are only blanched. It is dressed with orange vinaigrette which is perfect for this time of the year because oranges are in season. This gives it a really nice balance of sweet and sour. This salad can be made a few days in advance. I suggest dressing the salad right before serving because the acid in the vinaigrette can dull the bright green of the vegetables.
- 4 cups fresh snap peas
- 1 large bunch of asparagus
- 1 tablespoon orange zest
- ⅓ cup orange juice
- 2 tablespoons rice vinegar
- 2 tablespoons olive oil
- 1 tablespoon mustard
- Salt and pepper to taste
- Remove tough part of the asparagus stalk
- Blanche asparagus and snap peas
- Dry thoroughly and chop into large pieces. Set aside
- To make the dressing, combine the rest of the ingredients and whisk together well
- Toss dressing with vegetables right before serving. Garnish with extra orange zest
