I’ve never cooked collard greens before but it came in my CSA and it was just sitting in my refrigerator. They were getting kind of limp so I needed to do something with them otherwise they would just go bad. I came up with this recipe for Baked Collard Green Croquettes and I was really happy with the results. I had a bunch of potatoes also from the CSA and decided to combine the two, add some cheese and bake it. This is a really healthy, tasty appetizer that can be made in advance. It’s also a great way to sneak in veggies to your kids dinner. You can substitute kale or any hearty green leaf vegetable.

Ingredients
Method
- Cook potatoes with skin until they can easily be pierced with a fork
- Set aside to cool
- Add collard greens to a pot of boiling water. Cook 5 minutes. Drain and cool
- Squeeze collard greens dry and chop fine, add to a bowl
- Grate potatoes using a box grater and add to bowl
- Add the rest of the ingredients and mix well
- Form into patties
- Bake at 425 for 30 minutes
- Flip over croquettes halfway through baking
- Serve with tomato sauce
