My daughter Lilly borrowed a cookbook from a friend and out of all the recipes, she chose to make homemade soft pretzels. This is one of the first times she actively showed interest in baking and I really wanted to encourage her. It turned out to be a a really fun activity for us to do together. We shared the pretzels with my nephews and their mom, Naomi took the idea to the next level by making cheese pretzels. I was immediately intrigued since this is one of Lilly’s favorite foods. These cheese pretzels are for her. I hope you liked them, Lilly!
- 1¾ cups water
- 1 tablespoon dry yeast
- 2 tablespoons sugar
- 2 tablespoons olive oil
- 4 cups flour
- 1½ teaspoons salt
- 2 cups shredded cheese
- Add water, yeast and sugar to a bowl.
- Mix well and let sit for 10 minutes
- Once yeast begins to bubble, add the olive oil, salt and flour
- Mix well and knead until dough forms cohesive ball. If the dough is too wet add flour 1 tablespoon at a time. If it's too dry, add water, 1 tablespoon at a time.
- Let dough rise, covered in a warm place for about an hour or until doubled in size
- Divide dough into 4 parts
- Shape into long rectangle 4 inches by 24 inches, add ½ cup shredded cheese and close up so it resembles a rope
- Shape into a pretzel and set on baking sheet. Repeat with remaining dough
- Let rise for 30 minutes
- Bake at 400 for 20 minutes until pretzels turn golden brown
- Serve immediately.
