I had a bunch of green peppers in my refrigerator and they were starting to go bad. I didn’t have the heart to throw them out but I also didn’t have a lot of time on my hands to create something complicated. I love the flavor of peppers in calzones so decided to make an easier and healthier version. I sautéed the green pepper with some onions and added some cheese to rolled out store bought pizza dough. I then sliced the roll and baked it in a muffin tin. It was ready in about 15 minutes. It was enough to satisfy my calzone craving and I was happy I didn’t throw out the green peppers. A win win situation.
- 1 onion chopped
- 2 green peppers chopped
- 2 tablespoons olive oil
- ½ teaspoon salt
- 1½ cups shredded mozarella dough
- 1 lb pizza dough
- Sautee onion in olive for 5 minutes until onion is translucent
- Add green pepper and cook for another 5 minutes until peppers begin to soften
- Let cool
- Roll out pizza dough
- Spring with cheese and then top with veggies
- Roll and cut into 12 pieces
- Add to a muffin tin
- Bake at 375 degrees for 15 minutes









This was delicious and I don’t even like green peppers.
