I spent a few years of my childhood living in Israel. Green olives are a staple there and I have memories of eating soft crusty bread slathered in butter and topped with sliced green olives. These Cheesy Olive Bites are reminiscent of that. I generally like to cook healthy but once in a while even the best of us crave some cheesy goodness. This definitely satisfies that craving. I chose ingredients that keep well so that you can whip up a batch last minute. These take about 25 minutes to make including baking time since they are so small. I guarantee that they will fly off the plate faster than you can make them.
- 1½ cup pitted green olives
- One package of crescent dough
- 1 cup shredded mozarella
- 1 minced garlic clove
- Chop olives and mix with cheese and garlic. Set aside
- Roll out half the dough and spread half the mixture on top
- Roll it up and slice into 1 inch slices
- Add to greased muffin tin
- Repeat with second half of the dough
- Bake at 350 for 12-15 minutes

Baking these in a mini muffin pan is such a great idea!
Thanks Dinah! You can just stuff it into your mouth :-_
