This Cream of Celery Soup is vegan, gluten free and bursting with flavor. It’s hard to imagine that celery is the main ingredient. I’ve always known there is so much more you can do with celery than just use it as a base for soup or sauce. I’ve been thinking about this for a long time when the idea of making a Cream of Celery Soup kind of just popped into my head. This soup came out way better than I imagined and I already had high expectations . The one word that came to mind when I tasted it was, “OMG”. I wanted to keep this soup vegan but would not compromise on flavor. I added some nutritional yeast* and lots of onion and garlic. It also has an added depth of flavor that you get from roasting the vegetables first. I could not wait for my in house food critic to home and try it. When he finally tasted it, he declared it “mmmm”. That’s all the endorsement I need.
*Can be found at Whole Foods or any health store
- 1 head of celery
- 1 large onion
- 1 head of garlic
- 5 tablespoons of olive oil
- 1 cup of raw cashews
- 2 heaping tablespoons of nutritional yeast ( see note)
- Soy milk (optional)
- Wash head of celery separating each rib and toss with olive oil and salt and lay baking sheet
- Chop onion and peel garlic and add to pan
- Roast at 375 until the vegetables begin to brown
- While the vegetables are roasting soak cashews in water
- When vegetables are done add to pot with nutritional yeast and cashews ( with water)
- Make sure the vegetables are covered with water and cook on medium heat for ½ hour
- Puree and thin with more water or soy milk
- Serve with french fried onions









I want to make this! How long do the cashews have to soak for?
Just while the soup is cooking because it will soften some more when you cook it. I suggest you blend it in your vitamix for velvety smooth results
Because not all sisters have a Vitamix….
