What I love about these Mini Apple Pies is that not only do they taste delicious but they are deceptively easy to make. I love desserts that look like you’ve slaved for hours in the kitchen but in fact took only a half hour to make. I was talking to my friend Chavie who is super creative and talented and was asking her for dessert ideas. She told me about this lattice cutter she recently purchased that transforms a simple dessert to something very impressive. I ordered one immediately from Amazon. After it arrived I bought some apples and some puff pastry dough and I was all ready to go. This recipe simples calls for making an apple filling, rolling out the dough and using the lattice cutter to make a beautiful design. Best of all, you can freeze them raw and pop them into the oven whenever you need them. They taste best served warm with a scoop of vanilla ice cream. Step by step instructions are below.

Ingredients
Method
- Peel the apples and grate them using the large wholes of a box cutter
- Mix with vanilla, corn starch and sugar if you are using it
- Cook on a low to medium flame until soft
- When apple mixture is cooled, roll out both pieces of dough and cut into 9 squares
- Roll the lattice cutter across one sheet of dough
- Drop a heaping tablespoon of the apple mixture on the plain squares and top with a lattice cut square
- Pinch closed and brush each pie with some of the beaten egg
- Bake at 400 for about 20 minutes until golden brown
- Serve warm topped with a scoop of vanilla ice cream
