This Seven Species Farro Barley Pilaf is not only beautiful with all it’s colors, it is also bursting with flavor. I created a salad that uses all the Seven Species. The Jewish holiday of Tu B’shvat is coming up next week and it’s customary to try and eat all the seven species on this day. Farro is wheat and I used figs and honey in the dressing. I generally am not a raw onion fan but this pilaf really needed it and it works beautifully. You can prepare this in advance and serve it at room temperature. This makes an excellent side dish.
I used 10 minute barley and farro from Whole Foods for this recipe.
- 1 cup cooked barley
- 1 cup cooked farro
- ¼ red onion chopped very small
- ½ cup grapes ( any color ) sliced
- ½ cup pomegranate seeds
- ½ cup chopped parsley
- 4 figs
- ¼ cup olive oil
- ½ teaspoon salt
- 2 tablespoons honey
- 3 tablespoons pomegranate vinegar ( you can substitute red wine vinegar)
- 2 tablespoons yellow mustard
- 1 teaspoon cumin
- Add farrow, barley, onion, grapes, pomegranate seeds and parsley to a bowl
- Add the rest of the ingredients to a blender and puree until smooth
- Toss dressing with the rest of the ingredients
