Have you ever tried fresh garbanzo beans or Fresh Garbanzo Bean Hummus? I hadn’t either before my trip to the Santa Monica Farmers Market. I was enjoying the last few days before returning to work post maternity and on the lookout for interesting fruit and vegetables. I saw one stand selling a huge bundle that looked like it required a mule to carry it out of the market. I’ve never seen fresh garbanzo beans or really knew how they grew but after tasting one, I decided it was worth lugging a bundle home. Especially since my in house food critic was doing the shlepping. This recipe is time consuming only because you have to remove the pods from the stalks and then shell them. Once that’s done the rest is easy. I’m not necessarily suggesting you all run out and try to find fresh garbanzo beans. I suspect they are not easy to find but I wanted to share a recipe that I thought was fun to make and kind of cool. The hummus tastes a lot like hummus but much fresher.

Ingredients
Method
- Dump all ingredients into a food processor and process until smooth
- Add water one tablespoon at a time until you reach desired consistency

This is one of the coolest ideas I’ve seen in a long time! Fresh garbanzo beans–who would have thought?
Thanks Dina! If you were in LA I would have given you some 🙂
