My son’s nanny, Lorena asked me one day if she can pick up some ingredients to cook some food for her and Tal. She had cooked some delicious dinners for us in the past so I suggested she give me a list and make enough for all of us. Her list included chicken broth. I had two containers of broth in my freezer that I thought was lacking a bit of flavor so I suggested she use that. She used that as the base and added some vegetables and one of my favorite herbs, cilantro. I am absolutely amazed at how tasty this soup is. I asked Lorena if she added any more spices to the soup and she said just a bit of salt. Tal loved the soup as well. I actually think that he ate most of it. I will definitely be making this again.
I really recommend using homemade broth if you can.

Ingredients
Method
- Bring broth to a boil
- Add chicken breast and cook for 10 minutes
- Add carrots, potatoes and half the onions, tomatoes and jalapeños
- Cook until vegetables are soft
- Add salt to taste
- Serve topped with remaining fresh vegetables and jalapeños

As I’m cooking this I realize I should sauté the veggies add the broth and then the chicken and tomato and still the chicken is perfectly cooked before the veggies are soft.
