I have been making these Date Nut Bites for a while. Though they are amazing, we were ready for something equally as easy to make but with a different flavor profile. The idea for these Chocolate Macadamia Energy Bites came from my creative director (who has many titles). He suggested chocolate and macadamia and I came up with the rest. The combination of chocolate and macadamia make these taste almost decadent but I used 85% chocolate to keep these low in sugar. The oats add a heartiness and the dates add a little chewiness to round it all out. I started keeping a bag of these in my freezer for when a craving for something sweet strikes. - 2. cups oats
- 6 dates
- 1 cup raw macadamia nuts
- 1 3.5 oz bar of good quality dark chocolate ( I prefer 85%)
- ¼ teaspoon salt
- Add oats to a food processor fitted with the S blade
- Process for 30 seconds
- Add the rest of the ingredients
- Process until everything is finely ground and batter starts to stick together
- Shape into tablespoon size balls
- Freeze on baking sheet for 25 minutes
- Transfer to bag and keep in the freezer
