I hate throwing out food. Whenever I roast a chicken I usually have about a half a chicken left over. I found that I wasn’t eating the chicken because day old chicken has an odd off flavor. After too many times of throwing out chicken I finally decided to do something about it. Now we eat leftover chicken fajitas. I remove the chicken from the bone, shred it, add some sautéed vegetables, salsa and spices and dump it into a wrap with avocado. For some extra flavor I add some mayo to the wrap. When I cook chicken now, I plan for two dinners. The chicken is already cooked so this meal comes together in ten minutes. It tastes great and no one will complain about leftovers.
- 3 cups shredded chicken
- 2 cups frozen corn
- 5 scallions
- 1 cup chopped cilantro
- 1½ cups chopped tomato
- 2 heaping tablespoons salsa any kind)
- 1 tsp cumin
- ½ tsp ground coriander
- ¾ tsp salt
- 1 tsp hot sauce
- Saute scallions and corn until corn begins to brown
- Add cumin cilantro, hot sauce and salsa and cook for 30 seconds
- Add chicken and cook until warmed through
- Add tomatoes and cilantro and cook for 2 minutes
- Serve on wheat wraps with avocado and mayonaise
