I’m not sure this No Guilt Eggplant Pizza technically qualifies as pizza but it definitely qualifies as a delicious appetizer. If you eat enough of it (which I did), it can even be considered a whole meal. This recipe uses a very small list of ingredients for something that packs so much flavor but the key is to use fresh ingredients. I love this pizza. It tastes like summer but also satisfies my pizza craving which is a big deal because there is nothing that I like more than pizza. Nothing. This pizza is also gluten free but that’s just a side benefit.
To prepare tasty food, you want to be able to start with the best ingredients possible. You want to pick the freshest and tastiest produce you can find. Make sure the eggplants are small. The tomatoes should be Roma and when you smell them they should have a strong tomato smell. If tomatoes are out of season, you can use canned Marzano tomatoes.
- 4 baby eggplants sliced ½ thick lengthwise
- 1 lb Roma tomatoes
- 2 cloves of garlic crushed
- 4 tablespoons olive oil
- 2 handfuls of grated mozarella
- Salt for sprinking on eggplant and to taste for tomato sauce
- Pepper to taste
- 4 sprigs of fresh oregano
- Brush eggplants with olive oil on both sides and sprinkle one side with salt
- Bake at 400 for 20 minutes
- Grate tomatoes using the large wholes of a box grater. Set aside
- Saute crushed garlic in olive oil for 1 minutes and then add grated tomatoes
- Cook until thickened add salt and pepper to taste
- Add a tablespoon of the sauce to the top of each slice of eggplant
- Sprinkle with cheese and fresh oregano
- Return to oven and bake until cheese melts and begins to bubble
- Cool for a few minutes and then eat right away

Pizza is my favorite as well! I’m dieting now do I’ve been denied my favorite!! 🙁 I will definitely try this one can’t wait! ( no farmers market but they have nice small eggplants in Costco that I will pick up at the end of the week) ty I’ll let you know how it goes.
