Omama’s Belgian Waffles are one of the best I’ve ever eaten. This waffle recipe was given to me by my brother in law, Danny. Danny’s grandmother who was called Omama, was an incredible person and used to make the most amazing waffles. When my nieces where little they would bring them back from Boston when they went to visit her. They have a cake like texture but are still chewy and so perfectly flavored that you don’t even need to add syrup or cream. I would get to taste the days old leftovers that were still so good, that for years I’ve been wanting to make this recipe. My kitchen in LA was very small and I couldn’t justify another appliance like a waffle maker. Here in NJ, I had no more excuses for not making them. I got the handwritten recipe from Danny and I’m happy to say they came out amazing. I need more practice for them to taste exactly like hers though.
- 6 eggs separated
- 1¾ cups sugar
- 2 /14 cups flour
- 1 teaspoon baking powder
- 2 sticks of butter melted and cooled
- ½ pint of sour cream
- ½ teaspoon salt
- zest of 1 lemon
- 2 teaspoons vanilla
- Add all the dry ingredients to a bowl and mix well
- Add egg whites to a bowl of a standing mixer and whip until soft peaks form. Set aside
- Add the rest of the ingredients to the bowl with the flour, except for the egg whites. Mix until well combined
- Fold in egg whites until no streaks remain
- Add to heated belgian waffle maker
- Serve
