I wanted to bake something for my son’s teachers and so I came up with this One Bowl Citrus Loaf cake. This cake is not very sweet and has a strong citrus flavor from the dried fruit and tangerine juice. One bowl recipes are always my favorite because of the cleanup and I think this recipe can be easily modified for ingredients you have on hand. If you can’t find the candied fruit you can go ahead and use lemon and orange zest.

Ingredients
Method
- In a medium bowl, add flour, sugar, baking powder and salt
- Mix well
- Add candied fruit and mix well
- Create a well in the center and add eggs, juice, oil and vanilla
- Mix the liquid together and then mix with flour until incorporated
- Pour into a greased loaf pan
- Bake at 350 for about 50 minutes until a toothpick inserted comes out with a few crumbs attached

Quick question: Baking soda or baking powder? The ingredients list calls out soda, whereas the instructions calls out powder.
Hi Tiffani – its powder and I updated the recipe. Thanks for catching that!
