That Easy Rib Steak With A Crust look pretty awesome. Doesn’t it? That’s because it really is. After I learned to make it, I stopped ordering steak at restaurants because I just get disappointed because mine tastes so much better 😉
Let me give you the back story. When I got married and moved to LA, we practically had no furniture The second thing we bought after a bed was a grill because as Greg put it, we have to eat, right? I think he wasn’t quite sure about my cooking skills and figured that he could always take over :-). And so began the quest for a nice crusty steak. We researched online and mostly found suggestions for a cast iron pan on the stove stop. Cooking a steak indoors in a cast iron pan was not an option because of the ventilation in our apartment. We had an old pan that we tried putting on grill but the meat just stuck to it and it was a salty mess. We ate some mediocre rib steak for a while, until one day I was shopping at Costco and walking down the aisle of things I don’t need but have to buy, because its at Costco. I saw a cast iron griddle that cost $20 and figured I’d give my steak quest another try. I brought it home and put it directly on the grill, heated the grill until it was really hot with the griddle right on top of the grates and the steak came out perfectly. My brothers are huge meat eaters and grilling aficionados. They’ve adopted this method . They are a really tough crowd when it comes to food and especially meat so that’s all the validation I needed.
- 1 rib steak about 16-18 oz. Cut thick about 1½ inches. Ask your butcher.
- Freshly ground pepper
- Course salt. I like to use a sea salt grinder
- 2 tablespoons olive oil
- Put griddle directly on the grill
- Turn all burners to the highest heat and heat for 15 - 20 minutes
- Rub each side of the steak with olive oil
- Generously sprinkle salt and pepper on both sides of the steak
- When the grill is really hot grill steak on griddle about 2-3 minutes on each side depending how you like it.
- Remove from grill and let rest on wire rack for a few minutes.
