I was at the fruit store one day and saw this bunch of baby bananas and I just could not leave them there. They were cute looking and I thought I can feed them to my baby and not have to worry about waste since he usually doesn’t eat a whole one at a time. Anyway, they just sat on the counter and ripened so I peeled them all and used lollipop sticks in each one. I then froze them all on a cookie sheet. Once they were frozen I transferred them to a ziplock bag and kept them in the freezer until I decided to make S’mores Bananas. This is a fun treat for both kids and adults. If you can’t find baby bananas you can use regular size but just cut them in half.

- 10 baby bananas or 5 regular sized bananas
- 10 cake pop sticks
- 2 cups marshmallow fluff
- 3 tablespoons of coconut oil divided
- 1 cup chocolate chips
- 5 graham crackers crushed
- Peel bananas, insert stick and freeze until solid
- Microwave chocolate chips with 1 tablespoon coconut oil for about 1 minute until melted. Mix well and set aside to cool
- Microwave fluff with two tablespoons coconut oil on high for 45 seconds
- Mix well
- Using a spatula cover bananas in fluff and freeze for 10 minutes
- Crush graham crackers by putting them in a ziplock bag and rolling it with a rolling pin
- Remove fluff covered bananas and dip in cooled melted chocolate and sprinkle with graham cracker crumbs
- Freeze for 10 minutes
- You can serve immediately or freeze up to one month after transferred to a ziplock bag
