I am always on the lookout for new and easy chicken recipes. I especially like ones that require you to marinate the chicken because it usually makes it more tender and gets rid of the ‘chickeny’ flavor. This recipe is no exception. Its full of flavor and has a really nice texture. I used coconut yogurt and was surprised that it did not impart a coconut flavor. I love cilantro and I thought it added a nice touch but if you really dislike it, you can substitute parsley. This recipe will work equally well with chicken breast, just cut the grilling time in half.
I am usually not a fan of day old chicken but this chicken keeps really well for up to 3 days.
- ¼ teaspoon cayenne pepper
- 1 teaspoon ground ginger
- 1 teaspoon turmeric
- 1 teaspoon ground coriander
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1 teaspoon vindaloo or curry powder
- ½ cup chopped cilantro
- 1 teaspoon salt
- 2 tablespoons olive oil
- 2 cups plain coconut yogurt
- 2 lbs boneless chicken thighs
- Mix all the ingredients except for chicken in a bowl
- Add the chicken and let marinate 8-24 hours
- Heat grill to high heat and grill 10 minutes on each side
