I wanted to make something a little different for Rosh Hashanah ( the Jewish New Year) this year which starts this Wednesday night. We have a tradition to dip apple in honey for a sweet new year and these Vegan Apple Fritters definitely fulfill that requirement. They come together in minutes. You can make these at the end of your meal and serve them for dessert or just have them as an indulgent breakfast. The should be drizzled with honey or maple syrup. I served them to my in house food critic for some feedback. He said “I like them” which translates to “They are amazing”.

Ingredients
Method
- Peel and grate apples using large holes of a box grater - you should have about 2 cups
- Add flour, sugar, salt and baking soda to a bowl, mix and set aside
- Add apples, almond milk, oil, vanilla and flax seeds to a bowl and mix well
- Add wet ingredients to dry ingredients and mix just until combined. Don't overmix
- Add 1/4 inch oil ( I used both coconut and walnut ) to a frying pan on medium low heat
- Add heaping tablespoons of batter into the pan, fry until golden brown and then flip and fry other side
- Drain on paper towels and serve with honey
