I recently discovered Costco’s frozen tilapia and I’m hooked. It’s inexpensive ( compared to Salmon) and if prepared properly like this Low Carb Breaded Tilapia, it tastes delicious. In fact, my in house food critic commented that he doesn’t understand why tilapia sometimes get a bad rap. I’ve been trying to cut down on my carb intake and came up with this simple and tasty recipe. I mixed coconut and almond flour with some taco seasoning, dredged the tilapia and fried it in a bit of oil for a few minutes on each side. I’ve made it with both oil and ghee and both times the fish came out delicious. I served it with some Jalapeno Coconut Cashew Cream to take the flavor up another notch. The result was simply amazing and plates licked clean. If you are looking for new fish recipes like I me, try this and let me know what you think in the comments below.

[…] This Mexican Corn In A Cup Salad is based on the popular Mexican street food, Corn In A Cup. My sister Ayala gave me this idea one day and suggested I add it to my blog. I had never tasted corn cups before but after looking at some recipes I knew it would pair well with arugula. I modified the recipe to use easy to find ingredients and was surprised at how delicious it came out. I sauted the corn until it started caramelizing and it added an extra depth of flavor. It was so good that it was quickly eaten and didn’t even last until dinner time. I love the combination of salty cheese, sweet corn and sour lime juice. You can easily prepare this ahead of time and toss all the ingredients right before serving. This salad pairs really well with my breaded tilapia recipe. […]
