I just moved back to the east coast from Los Angeles. I already miss my friends and of course the farmers market that I used to go to every Sunday. But it’s great to be near family. As soon as I got here, I joined a CSA and got my first box on Thursday. I was really excited because it gives me an opportunity to become really creative with my cooking as well as have access to really fresh fruits and vegetables. This Black Bean Corn Soup is my first recipe using mostly vegetables from the share. It came out amazing. I had my parents over just as soup was finished cooking and they both loved it. For me, that’s all the reassurance I needed to know this recipe is perfect for sharing. I topped the soup with fried halloumi cheese but you can leave it out if you’d like to keep the soup vegan.
- 1 yellow onion chopped
- 2 cloves of garlic minced
- 2 bay leaves
- 2 tablespoons tomato paste
- 2 teaspoons salt
- ¼ teaspoon black pepper freshly ground
- 3 medium tomatoes cut into ½ inch cubes
- 4 carrots
- 3 cans of black beans
- 1 bunch of kale destemmed and chopped
- 4 ears of corn - corn sliced from husks. Alternatively you can use two cups of canned or frozen corn.
- Fried halloumi optional
- Saute onion on medium heat until translucent
- While the onion is cooking, add one can of beans and the carrots plus a cup of water to a blender and process until smooth
- Add garlic and sauté until fragrant
- Add tomato paste and cook for 30 seconds
- Add tomatoes and pureed beans
- Add the rest of the beans, corn and kale
- Add 4 cups of water or until you reach desired consistency
- Cook for 20 minutes
- Served topped with fried halloumi cheese
