This Roasted Pepper Pizza is not only pretty to look at but it tastes delicious as well. I think peppers, onion and cheese make a really good combination. Put that on top of dough and you get my favorite food ever. Pizza has always been number one on my list but I feel like it doesn’t hurt to pack it with vegetables. I precooked the peppers and onions by roasting it in the oven so it lost moisture and I could fit a lot more on the pizza without compromising the texture and making it watery. It worked out perfectly. There is so much flavor that you don’t need any tomato sauce. I made my own dough by following the recipe on the bag of the yeast packet but you can save yourself some time and use store bought dough. I promise you will love this!
- 1 lb pizza dough
- ½ red pepper
- ½ yellow pepper
- ½ green pepper
- 1 medium white onion
- 2 tablespoons olive oil
- 1 teaspoon salt
- 8 oz shredded mozarella
- ½ cup chopped fresh basil
- Slice peppers and onions and toss with olive oil and salt
- Roast at 425 degrees for 30 minutes
- Set aside to cool
- Roll out dough to 13 inch round
- Bake at 450 for 5 minutes
- Add 6 oz of cheese, top with peppers and sprinkle with the rest of the cheese
- Return to oven and bake for another 10 minutes until cheese is completely melted and bubbling
- Sprinkle with chopped fresh basil
- Serve
