Sometimes I just like to challenge myself and come up with a recipe where you would never guess the ingredients. I had a box of frosted flakes at home and my kids don’t really eat it and I didn’t want to throw it out. I thought if I could use it to make cookies that would definitely be a hit. So, I created these Cereal Cookies. I dumped the entire box in the food processor and processed for a few minutes until it resembled corn meal and I created this cookie that tastes a lot like a corn muffin. They are buttery, chewy and sweet. What more can you ask for in a cookie? Actually, my kids thought it was missing chocolate chips but that’s because they don’t consider it a cookie otherwise.
- 3 cups ground frosted flakes (see note)
- ½ cup flour
- ½ cup light brown sugar
- 1 egg plus 1 egg yolk
- 1 stick butter softened
- 2 teaspoons vanilla
- ½ teaspoon baking powder
- ½ teaspoon salt
- Mix light brown sugar and butter in a bowl until well combined
- Add eggs, salt and vanilla and mix well
- Add flour, baking powder and ground frosted flakes to the bowl and mix until combined
- Using a large tablespoons shape dough into balls and flatten slightly
- Bake at 350 for about 12-15 minutes until bottoms begin to brown
