I didn’t quite understand the hype around Everything But The Bagel Spice because I am not a fan of Everything Bagels. I like mine with just sesame seeds. But I quickly changed my mind once I tasted the spice, mixed with nuts. Greg thought that the spice mix would be great with fried chicken and challenged me to come up with a recipe. I created the Everything But The Bagel Spice Chicken Fingers recipe by adding just the spice mix to my bread crumb mix. It came out amazing. My picky family loved it. I will definitely be adding this to the dinner rotation.
I served the chicken fingers with a dipping sauce to take it to the next level. This is excellent as an appetizer or a main dish.
- 1½ cups regular bread crumbs
- 1½ cups panko bread crumbs
- 3 tablespoons Everything But The Bagel spice mix
- 4 eggs
- 3 tablespoons soy sauce
- 1½ lbs chicken breast or chicken tenders
- ¼ cup flour
- Slice chicken into finger size pieces and dredge in flour. Set aside
- Mix bread crumbs and spice in a shallow bowl. Set aside
- Mix eggs and soy sauce in a shallow bowl and set aside
- Add oil to a pan so that its covering ¼ inch of the pan. Set heat to medium
- Add chicken to bowl with egg mixture and ensure each piece is coated
- Taking one piece of chicken at a time, dredge each in bread crumbs
- Add to pan and turn when golden brown
- When both sides are golden brown, remove from pan and continue with remained pieces
- Serve with dipping sauce

This looks really interesting! No one here except me likes everything bagels, so my spice has been languishing in the fridge. Now I can use it up.
I like to add sweet chili sauce and/or sriracha to that dipping sauce.
