My first apartment in Manhattan was across the street from a restaurant that sold mostly greasy fast food. Their one exception was this incredible chicken rumaki that begged to be recreated at home. I made it a few times when I lived in the city but then completely forgot about it until I had a package of beef fry in my freezer. I was trying to come up with an appetizer recipe that was easy to make ahead and this one popped into my head. It’s simpler than it looks and so flavorful. Prepare a huge batch because I can assure you it will be polished off.

Ingredients
Method
- Mix mustard, sriracha, olive oil salt, black pepper and 2 tablespoons apricot jam and add to ziplock bag
- Add chicken to ziplock bag, mix well
- Wrap 1 piece of chicken and 1 piece of scallion with beef fry
- Repeat with remaining chicken
- Add to pan and brush with 2 tablespoons apricot jam mixed with 2 tablespoons hot water
- Bake at 400 for 20 minutes
- Serve with more mustard
