I was reading an article on food trends and came across a new one that I’ve never had before. It’s an Indian street food that is quite common in India but is trending now in the US. I spoke to my friend Sukrit who told me what ingredients are generally included. I created these Vegan Veggie Fritters based on his advice. They are super tasty and come together quickly. I added my own spin on it by creating a non traditional dipping sauce. Together with the sauce, this Pakora is a dynamite of flavor.
Vegan Veggie Fritters (Pakora)

Ingredients
- 2 cups chickpea flour
- 1 teaspoon cumin
- ½ teaspoon ground coriander
- ½ teaspoon salt
- 1 cup sparkling water
- 1 package spinach defrosted and squeezed dry
- ½ red onion sliced thin
- 2 cups corn kernels ( either frozen or canned)
- Sunflower oil for frying
Instructions
- Mix flour, salt and spices until well combined
- Add sparkling water until it forms a thick batter
- Add vegetables and mix to combine
- Add oil to a frying pan and heat on a medium flame
- Drop large spoonfuls of batter into the pan
- Flip when golden brown and cook other side
- Remove from pan when both sides are golden brown
- Serve sprinkled with fresh cilantro and dipping sauce
Dipping Sauce
Ingredients
- ¼ cup salted sunflower butter
- ¼ cup hot water
- 1 teaspoon sriracha
- 3 tablespoons nutritional yeast
Instructions
- Mix well
- Add extra water if too thick
