I’m sure there are lots of recipes out there that call themselves Easy Roast Duck, but this recipe is really easy. It requires a few minutes of prep time and the cooking is hands off. I don’t buy duck that often so when I do prepare it, it has to be truly special. I think duck pairs really well with blueberries but also needs some acidity to cut through the fat, so I covered the duck with a blueberry jam mixture and stuffed it with it cherry plums. I then served the cooked plums with the duck and it was a huge hit. Will definitely be making this one again.

Ingredients
Method
- Mix blueberry jam with garlic and salt
- Spread over duck making sure to cover the whole duck and inside the cavity
- Stuff the cavity the plums
- Set duck on wire rack in a roasting pan
- Poke duck with holes using sharp knife
- Bake at 350 for 2 - 2 1/2 hours
Notes
I like poultry cooked until it falls off the bone so I cook my duck for 2 1/2 hours. If you like yours less well done, cook for less
