This Summery Feta Farro Salad is basically a complete meal. The mix of farro and lentils which are a legume make it a complete protein. When you want a light vegetarian meal this can be your perfect go to salad for lunch or dinner. It’s got a summery feel but really can be made any time of the year. Feta is my new cheese obsession and I’ve been adding it to so many salads but it especially pairs well with cucumbers and tomatoes. Let me know know what you think in the comments section below.
Summery Feta Farro Salad

Ingredients
- 1 head romaine lettuce chopped
- 4 small cucumbers - I prefer persian sliced into ¼ inch pieces
- 2 cups grape or cherry tomatoes sliced in half
- 2 cups cooked lentils
- 2 cups cooked farro
- 6 oz crumbled feta
- ½ cup sliced green or kalamata olives
- 4 tablespoons chopped fresh oregano or 1 tablespoon dried
- 2 tablespoons red wine vinegar
- 2 tablespoons olive oil
- ¾ teaspoon salt
Instructions
- In a small bowl or cup add vinegar, olive oil and salt. Mix and set aside
- Add the rest of the ingredients
- Toss with dressing and serve
