For this recipe of Grilled Fish With Charred Scallion Dipping Sauce, I used mackerel but you can use any small white fish . I really suggest grilling the fish outdoors to avoid a fishy smell in your house and to add that extra layer of smoky flavor. I cut a few slits on each side of the fish and rubbed it down with salt, olive oil and lemon pepper. I make sure to add the rub in the cavity as well. I then stuffed the cavity with some fresh lemons and herbs and grilled it on high. I served the fish with a charred scallion dipping sauce. It was delicious. Feel free to experiment with the freshest fish you can find.
When buying fish, ask your fish monger what came in that day to ensure you get good quality fish.
