There was a restaurant that I used to eat at that had this Japanese Style Grilled Mushroom Salad that I used to order. The dish was called Kinoko which I recently learned is Japanese for mushroom. I tried replicating it at home but I couldn’t quite get it. I had no idea that it was grilled and I gave up for a while until recently when I tried to make it again. The difference was that this time I prepared it on the grill. I took a bite and I realized I found the secret ingredient. All these years it was missing that little bit of smokiness.
