Sorry folks for being away for a while. I’ve been really busy at work with a high profile project and then I had an awful stomach virus. But I’m back and I hope you enjoy this recipe as much as I do. These Pina Colada Bites are so simple. Just two ingredients or three if you decide to add a splash of rum. I was looking for an alternative to date nut bites which taste amazing but I just wanted something a little different. I can’t even remember what inspired this but they are guilt free. These are sweet and tangy and remind you a bit of sunset in Cancun.
- 8 oz unsweetened dried pineapple
- ¼ cup sugar (Optional. I do not use it)
- 1 cup unsweetened shredded coconut
- Splash of rum (optional)
- Add all ingredients to a food processor with an S blade
- Process until the pineapple is shredded to small pieces and the mixture can be rolled into a ball
- Add a splash of rum and process for another 30 seconds
- Roll into bite size balls and store in an air tight container in the refrigerator
