These Veggie Pizza Rolls are absolutely amazing and bursting with flavor. While these are not “no-guilt” they are a great way to sneak in veggies. I took one bite and knew it would be hard to control myself from not eating them all. I may have mentioned before that my in-house food critic tends to be a bit of a food snob. I think I’m a snob but he takes it to another level. When he asked how I made these and I said I used store bought dough, he turned up his nose. I was like “whatevs, more for me”. A little while later I was eating one and he swallowed his pride and asked for a bite. Let me just say it was the biggest bite I’ve ever seen. I told him that I won’t judge him if he got his own. He ate two. I knew I had a winner.
I wanted to keep this vegetarian so I used vegan chopped meat. With the vegetables and cheese you really can’t tell. I used mildly hot peppers to make the flavors a little bit more grown up. Feel fee to substitute red, yellow or green peppers if you don’t like your food spicy.
- 1 lb pizza dough
- 1 lb baby zuchinni (or the thinnest and smallest you can find)
- 8-10 scallions
- 4 mildly hot peppers such as jalapeno deveined and seeded
- 3 tablespoons of olive oil
- 2 handfuls of shredded mozzarella or cheese of your choice
- 1 6 oz package of vegan chopped meat
- Salt and pepper to taste
- Chop all the vegetables and add to a pan with olive oil
- Saute until soft and most of liquid is evaporated
- When the vegetables are cooled, mix with chopped meat and cheese
- Add salt and pepper to taste
- Roll out to 14 inches long and 6 inches wide
- Add filling to dough
- Roll up and slice into 12 pieces
- Add to greased muffin tins
- Bake at 400 for 20-25 minutes















I love the way you use muffin pans to make finger food. Fancy enough for a dinner party appetizer!
